As we approach Memorial Day, a time to honor the brave men and women who have served our country, it’s fitting to reflect on the innovations that have improved the lives of our military personnel. One such innovation is the development of Meals, Ready-to-Eat (MREs), which have revolutionized the way soldiers eat in the field.

The Story Behind MREs:

The concept of ready-to-eat meals for soldiers dates back to World War II, with the introduction of the K-ration and C-ration. However, it wasn’t until the 1980s that the modern MRE as we know it today was developed. 

MREs were designed to provide soldiers with a complete meal that required no additional cooking or preparation. 

Each MRE contains an entrée, side dishes, snacks, desserts, and a beverage mix, all packaged in durable, lightweight pouches.

As we celebrate Memorial Day, we pay tribute to the courage and sacrifice of our veterans. These brave men and women have served our country with honor and deserve our utmost respect and gratitude. 

Chili-Mac, An MRE Favorite

Jamie, Allegiance Patient Care Coordinator shared her story as a military child and now shares her and her dad’s favorite MRE meal, Chili-Mac!

Below is the recipe she’ll be making this Memorial Day. Enjoy!

Jamie’s Chili-Mac Recipe

Ingredients:

  • 1 lb ground beef
  • 2 cups uncooked elbow macaroni
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped green onions, sour cream

 

Instructions:

  1. In a large skillet or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add diced onions and minced garlic to the skillet with the cooked ground beef. Cook for another 2-3 minutes until the onions are softened and translucent.
  3. Stir in the diced tomatoes (with their juices), kidney beans, uncooked elbow macaroni, beef broth, chili powder, cumin, paprika, salt, and pepper.
  4. Bring the mixture to a simmer. Cover and let it cook for about 12-15 minutes, stirring occasionally, until the macaroni is tender and cooked through.
  5. Once the macaroni is cooked, remove the skillet from heat. Taste and adjust seasoning if needed.
  6. Serve the chili mac hot, topped with shredded cheese, chopped green onions, and a dollop of sour cream if desired.
